For 2:

2 fillets of white fish
1-2 tablespoons olive oil (optional)
1 teaspoon grated fresh ginger (or from a jar is fine!)
2-3 teaspoons chopped coriander
Freshly ground black pepper
half a lime (or whole small one) - thinly sliced


Preheat the oven to 180C.

Line a baking tray with foil with enough to spare to fold over the top to make a parcel.

Place the fish on the foil.

In a bowl mix the olive oil, ginger, coriander and black pepper, then spread it over the top of the fish.

Lay the lime on and/or between the fish pieces.

Fold up the foil like a parcel, try not to let the top of the foil touch the fish.

Bake for approx 20-25 minutes.

I like to serve with boiled new potatoes and french beans or asparagus.

sounds good( apart from the corriander)-which i think is disgusting do you think it would work without ? or should i try another herb , any suggestions?

Great recipe just tried it tonight. Next time will reduce the amount of ginger, I didn't measure very carefully and added too much. Really tasty, had it with some rice and veg
