For 2:
2 fillets of white fish
1-2 tablespoons olive oil (optional)
1 teaspoon grated fresh ginger (or from a jar is fine!)
2-3 teaspoons chopped coriander
Freshly ground black pepper
half a lime (or whole small one) - thinly sliced
Preheat the oven to 180C.
Line a baking tray with foil with enough to spare to fold over the top to make a parcel.
Place the fish on the foil.
In a bowl mix the olive oil, ginger, coriander and black pepper, then spread it over the top of the fish.
Lay the lime on and/or between the fish pieces.
Fold up the foil like a parcel, try not to let the top of the foil touch the fish.
Bake for approx 20-25 minutes.
I like to serve with boiled new potatoes and french beans or asparagus.
