Do 1 potato per person. Cut each potato in half length ways. Chop each half into 4 long wedges - place in a large bowl, add 1/2 tablespoon of olive oil, teaspoon of paprika and black pepper. Mix well together. Place on a roasting tray and cook in a preheated oven (gas mark 5) for 35 minutes. (you could use sweet ptatoes if you wanted too or a mixture).
Buy low fat wraps - allow one per person.
For the filling.
Slice turkey (could be breast meat or whatever is available really) into strips and fry in a tablespoon of olive oil for 5 - 6 minutes until browned. Remove from frying plan and reserve.
Slice a red onion, green pepper, red pepper and 2 cloves of garlic. Fry for 5 - 6 minuted until softened. Add a teaspoon of paprika, 1/2 teaspoon of mild chili powder and 1/2 to a can of chopped onion. Simmer for a couple of minutes. The add in the turkey - stir well and cook for a few more minutes (it depends how you like your peppers cooked really).
Warm the wraps in the oven. Whilst they warm mix 2 teaspoons of pesto with a small tub of fat free greek yoghurt - this is instead of guacamole for the wraps and tastes delicious).
Take out eh wraps and spread almost to edges with the yoghurt mix - add the turkey and peppers filling and roll into wraps. Serve with the potato wedges (if all goes well this will be cooked at the same time.
The recipe came from the WI cookbook ( they made it make more sense I expect but this should work)(it is fab) and is a great example of low fat/ low cal healthy eating that can be enjoyed by everyone without feeling you have made a sacrifice to a diet or healthy living.
