2 x leeks, 2 x celery sticks, 1 x red chilli, 2 inch piece of ginder, 1 x white onion, 1 x garlic, half a cabbage, 1 cup of red lentils, small tin toms.
Chop leeks, celery, chilli &amp;amp; ginger &amp;amp; sweat off in a little olive oil.  Add chopped cabbage, lentils and tin toms and stir well.  Top up with water (1 inch above) bring to boil and simmer for 1 hour.  Blend and season to taste. Dont forget the garlic &amp;amp; mixed herbs though.
Also this is a great base to turn into cottage pie if you add some peas &amp;amp;a little gravy mix.Then top with sweet potato&amp;amp; potato mash.

Top Tip - Make big batches of food and you can freeze some for days when you don&amp;#039;t have time to cook from scratch
