As a new mum I know how busy life is my baby who is only 5 months and takes up all of my time, but as a person who loves food and likes to cook my own meals I have some great ideas ..

Top Tip - Make big batches of food and you can freeze some for days when you don't have time to cook from scratch

One of my fall back recipes is mince with what ever is in the fridge!

Take some onions and fry in a little olive oil until soft, add the mince and brown. Then add a couple of cans of chopped tomatoes and beef stock cube, dash of Worcester sauce sauce and big squirt of tomatoes puree - leave to simmer on the hob for as long as you like... then add what every veg you have to hand, peppers, mushrooms, tomatoes. The great thing about this dish is you can make it when ever the baby falls asleep and it will be happy simmering away all day if you like... then just serve with pasta and some grated cheese... You can also add pesto and glass of red wine left over from the night before anything goes - different every time you make it.

What ever is left just pop in the freezer..

Hey looks like you stole my recipe that i've always cooked! Dont forget the garlic & mixed herbs though.
Also this is a great base to turn into cottage pie if you add some peas &a little gravy mix.Then top with sweet potato& potato mash.
Or howabout adding some chilli powder & some chilli kidney beans to make chilli-con -carne with some rice.

Roasted Veg are a great quickie - just chop and spray with 1 cal spray and hey presto! Sweet potatoes, carrots, parsnips, shallots, whole garlic cloves, peppers, courgetes, cherry toms, etc. etc............

I have a fab recipe for soup - invented by my mother in law! Its so tasty and is full of goodness.
2 x leeks, 2 x celery sticks, 1 x red chilli, 2 inch piece of ginder, 1 x white onion, 1 x garlic, half a cabbage, 1 cup of red lentils, small tin toms.
Chop leeks, celery, chilli & ginger & sweat off in a little olive oil. Add chopped cabbage, lentils and tin toms and stir well. Top up with water (1 inch above) bring to boil and simmer for 1 hour. Blend and season to taste. Makes a big pot which will keep in fridge for a couple of days.
