Piece of salmon fillet, about 100g for me, larger if you&amp;#039;re hungrier or not dieting.
1 aubergine, 1 courgette, 2 red onions, 1 red pepper.
Cut the veg into chunky pieces &amp;amp; lay onto a baking sheet brushes with oil.  Sprinkle some crushed garlic, mixed mediterranean herbs, bit of salt &amp;amp; pepper.  Bake at 180C for about 25 mins.
