One of my favourites (even without a diet), and for dinner tonight.
Piece of salmon fillet, about 100g for me, larger if you're hungrier or not dieting.
1 aubergine, 1 courgette, 2 red onions, 1 red pepper.
Cut the veg into chunky pieces & lay onto a baking sheet brushes with oil. Sprinkle some crushed garlic, mixed mediterranean herbs, bit of salt & pepper. Bake at 180C for about 25 mins.
When the veg have been in for 15 mins, put the salmon fillets onto another tray brushed with oil, skin side down. Sprinkle with salt & pepper (or some packet cajun seasoning is great), and put in the oven with the veg for the last 10 minutes.
Serve with 2 tablespoons of cooked basmati rice or other small carb serving of choice.
