Hi Samantha, I too am on a low fat diet and have lost 2 stone on this. As I'm veggie I use quorn mince a lot in my cooking. Recently I fried some onions, mushrooms, courgettes, peppers in minimum oil, added the mince (I use frozen), some chopped carrots, a dollop of curry paste, tinned tomatoes, stock (Marigold bouillon) and water. Bring to boil and simmer for about 20 or 30 mins. Serve with brown rice.
I learnt the other day that if you soak your rice for as long as poss beforehand (eg all day), the cooking time will be much less.
You could also use prawns instead of mince. Another meal I make a lot of is prawn risotto adding some curry paste to spice it up. I just watch my portion sizes.
