I love curries but I'm hopeless in the kitchen. I'm following a low fat, calorie controlled diet and was wondering if anyone could offer a few recipes please (the easier, the better). Thanks x

Hi Samantha, I too am on a low fat diet and have lost 2 stone on this. As I'm veggie I use quorn mince a lot in my cooking. Recently I fried some onions, mushrooms, courgettes, peppers in minimum oil, added the mince (I use frozen), some chopped carrots, a dollop of curry paste, tinned tomatoes, stock (Marigold bouillon) and water. Bring to boil and simmer for about 20 or 30 mins. Serve with brown rice.

I learnt the other day that if you soak your rice for as long as poss beforehand (eg all day), the cooking time will be much less.

You could also use prawns instead of mince. Another meal I make a lot of is prawn risotto adding some curry paste to spice it up. I just watch my portion sizes.

Basic curry:
Gently fry crushed garlic, chopped onion til soft in 2 tbsp olive oil
Add 1tsp cumin powder, 1tsp coriander, 1tsp paprika, 2 tsp tumeric, 1/2 tsp chilli or 1 frsh chilli chopped.

Add any meat, fish or veg and pulses such as chick peas and fry gently

Add 1/2 pt stock and cook til all tender

Stir in 1 tbsp garam masala and Bob's your uncle!
