I like a good curry but it's usually fattening. Anyone know of a recipe for a tasty, easy to prepare curry using simple ingredients or have any tips to cut down on calories in regular ones? I don't mind bolied rice.

For a basic curry sauce I use

4 tbsp vegatable oil
1 onion roughly chopped
few spring onions
2 chopped garlic cloves
2-3 tbsp thai green, yellow or red paste depending on my mood
14oz tin coconut milk
fresh or dried coriander
2-3 tbsp lime juice

Heat oil in a wok, add onion, spring onion and garlic cook gently.
Stir in curry paste.
Pour in coconut milk stir and simmer.
Add coriander season with lime.

I like this with chicken, but I guess you could use any meat. Or you could you could use any curry paste

I get the impression that Thai curries are less fattening than Indian - I do not know - but the indian ones often add Ghee - not that people use this much these days i think. Vegetable curries will be less fattening too than red meat I think. I love curries. It is all the trimmings that pile on the pouds i fear!

Cut out the coconut milk, and creamed coconut - it's really fattening! I add milk when cooking the curry and a couple of ablespoons of either natural yoghurt or low fat creme fraiche if I want a creamy one. As far as a basic curry recipe:
Fry an onion, red chilli, garlic and fresh ginger then add
1 tsp cumin, 1 tsp coriander, 1 tsp paprika, 2 tsps tumeric.
Add veg, pulses meat or fish ( I love fish in curry - make an excellent shark curry the other day!)
Then add stock or milk, tin tomatoes if wanted,
At end, add creme fraiche or yoghurt and good spoon garam masala.

Enjoy!

Andrew - if you're feeling really lazy, Weightwatchers do a range of cook-in sauces in jars (Sainsbury's have them) that are quite tasty.

I've tried the pasta sauce and also a curry one that I cooked some chopped onions, butternut squash and aubergine in. Next to no calories.

Just remember to weigh your rice before you boil it - very easy to cook more than you need! I usually use about 60g, but you might need about 75g (dry weight) for a man-size portion!
