why don't you speak with a Dietitian?; freelance dietitians can be found on www.dietitiansunlimited.co.uk; they will help with your diagnosis and recipes as well as lists of what to avoid and alternatives; Lots of people use rice and quinoa as an alternative to pasta which are wheat and gluten-free; Keeping a diary of foods eaten and whether they lead to any symptoms (plus severity) will help them assess your intolerance

By whom?!

A gluten free diet is (as I understand it) quite restrictive, and you can do yourself harm if you have a Coeliac disease (gluten intolerance) that isn't properly treated. If you have gone through your GP, surely they can refer you to a dietician. If you haven't, then you should as there are other health issues that go hand in hand with this disease and you need proper medical advice.
